My Grandmas success with Paleo eating

In an effort to get healthier and being totally inspired by my grandson, approximately three weeks ago I put my husband and myself on the Paleo diet. I must say it was with trepidation that I entered this "foreign" territory. We have led a "low fat" lifestyle for years (sometimes more faithful than others), but for the most part, low fat. Even with that, my cholesteol has crept up to the point that my doctor put me on medication for it. My husband has high blood pressure, high cholesterol, and is a type 2 diabetic, which told me something was not adding up, we were doing something wrong. SO, I decided to give the Paleo diet a try. I know that I have much to learn, but we have been sticking closely to the diet for the past three weeks, and the more I learn and experiment with the foods we are allowed to have, the easier it is getting. We no longer eat anything processed. We eat VERY few carbs. I buy organic as much as I can, and we eat only 100% grass fed beef, and butter from grass fed cows. We eat pork, chicken, tuna, spinach, kale, beets, brussel sprouts, avocado, cauliflower, sauerkraut, cheese, eggs, and low fructose fruits. I cook with olive oil and butter, but am going to introduce some coconut oil this week. To satisfy my husband's sweet tooth I have been making ice cream by blending smoothies with Fage yogurt (shhh, he hates yogurt but loves the ice cream and has no idea it contains yogurt), heavy whipping cream, blueberries, strawberries, cranberries, blackberries, a banana, 1 TBS of honey, and then I fold in some slivered almonds. I pour it into small tupperware containers, freeze them and we have a delightfully yummy dessert. My husband had a doctor's appointment this past week. His blood pressure was spot on, and his weight was down to 191. He has been over 200 for a very long time. This morning, just for the heck of it I decided to weigh myself. I had him weigh first so that I could make sure our scale was accurate, and to my amazement I am slightly under 130 pounds. I have been fluctuating between 137 and 140 for years, so this was a total shock for me. I am enthused to keep going. I know that I need to incorporate some exercise into our daily routines, and will probably begin with walking. I am so glad I decided to weigh myself today, it was a real eye opener for me. It gave me some undeniable evidence that we just might be on the right track.
